  • Pastry for 9 inch 2 crust pie
  • 1 c. sugar
  • 1/4 c. all-purpose flour
  • 1/4 tsp. ground cinnamon
  • 4 c. sliced fresh nectarines (med. size)
  • 1 1/2 c. fresh raspberries
  • 1 tsp. lemon juice
  • 2 tbsp. butter
First of all heat oven to 425 degrees. Prepare pastry. And then mix sugar, flour and cinnamon. Next is to stir in nectarines and lemon juice. Turn into pastry-lined pie plate. Top with fresh raspberries. Dot with butter. Cover with top crust that has slits cut in it. Seal and flute the edges.To prevent excessive browning of the edges, cover with 2 to 3 inch strip of aluminum foil. Remove foil during last 15 minutes of baking. Bake until crust is brown and juice begins to bubble through the slits in the crust,
approximately 35 to 45 minutes. The raspberry pie recipe is ready to serve with fresh whipped cream or vanilla ice cream....hmmm...delicious ! Enjoy the pie !

Raspberry Pie Ingredients:
  • 1 Orange, zest of
  • 1/3 cup Sugar
  • 2 tablespoons Cornstarch
  • 1 Short-crust pastry shell OR flaky pastry shell
  • 1 Egg white; beaten for glaze
  • 1 pound Fresh rhubarb; 1" diag cut
  • 2 cups Fresh raspberries
  • 8 ounces Seedless raspberry jam
  • 2 tablespoons Water
  • 1 tablespoon Fresh lemon juice
  • Confectioners' sugar

Raspberry Pie Instructions :

First of all glaze the shell with the beaten egg white and prebake. And then Preheat oven to 400 degrees. Nest is to put orange zest in food processor with sugar and mince, or chop finely by hand. Mix zest with cornstarch and spread in pie shell. Arrange rhubarb on top.
Cover pie loosely with foil and bake 40 to 45 minutes, or until fruit is just tender. (It will continue cooking for a few minutes after it is removed from the oven.) Set aside to cool.
Place raspberries decoratively on top in concentric circles. Heat raspberry preserves with water and lemon juice, and when almost cool, paint tops of raspberries with a pastry brush, covering all
nooks and crannies, to achieve an even glaze.Just before serving, dust lightly with sifted confectioners' sugar. If desired, serve with vanilla ice cream or a bowl of lightly whipped cream. And the raspberry pie is ready for feast....nice with family and friends ! Enjoy !

  • 2 cups Cream, heavy
  • 6 ounces Cheese, cream; softened

  • Leaves, mint; optional
Raspberry Pie Recipe Instructions:
First of all Preheat oven to 375F. Roll out pastry to 11" circle; line 9" pie plate. And then Trim and flute edges; prick bottom and sides with fork. Bake 15 minutes, until golden brown.Cool completely on wire rack.
Next is to Beat cream in small bowl on High until stiff peaks form; set aside. Combine cream cheese and vanilla in medium bowl; beat until light and fluffy. Blend in fruit spread, scraping sides of bowl
Reserve 1/2 c of whipped cream for garnish; fold remaining whipped cream into cream cheese mixture until no white streaks remain. Spread evenly into cooled pie crust. Chill at least 2 hours.
Just before serving, spoon reserved whipped cream around edge of pie. Garnish with raspberries and fresh mint leaves, if desired....and the raspberry chiffon pie is ready for feast...amazing taste of pie...enjoy it !

2 baked 9-inch pie crusts

Raspberry Pie Filling
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 1/4 cup water
  • 1/4 teaspoon lemon juice
  • 1 box (3 ounce size) raspberry Jell-O
  • 3 cups fresh raspberries

Vanilla Filling
  • 3 cups milk, scalded
  • 1/2 cup cornstarch
  • 1 1/3 cup granulated sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 egg yolks
  • 1 cup milk

Raspberry Pie Recipe Instructions:

For Raspberry Filling: Heat the 1 cup water and sugar. Mix the cornstarch, salt, 1/4 cup water and lemon juice. Add to water-sugar mixture. Boil until mixture is clear. Add Jell-O and stir to
dissolve. Add raspberries and let cool.
For Vanilla Filling: Place 3 cups milk in kettle. Heat to scalding.Mix cornstarch, sugar, salt, vanilla, egg yolks and 1 cup milk. Slowly blend into hot milk, stirring constantly until thick. Cool.

  • 3/4 cup whipping cream
  • 2*tablespoons sugar
Raspberry Pie Recipe Directions:
Prepare pie shell as directed on package or homemade. Set aside. In a medium pan, stir together 2 cups of the raspberries, the 3/4 cup sugar, cold water, lemon juice, and cornstarch. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat. Cool slightly. Cover and refrigerate until chilled. Carefully fold 2 cups of the remaining raspberries into the chilled mixture. Spoon into pastry shell. Cover; chill for at lease 2 hours or until firm. To serve, in a chilled metal bowl, combine whipping cream and the 2 T. sugar. Beat with chilled beaters of an electric mixer on medium speed until soft peaks form. Raspberry Pie Recipe Ingredients:
  • 1 1/4 cup graham cracker crumbs
  • 1/3 cup butter, melted
  • 1/4 cup sugar
  • 1 package (10-ounce size) frozen raspberries in syrup, thawed
  • 1/4 cup water
  • 1 envelope (1/4-ounce size) unflavored gelatin
  • 1/4 cup sugar
  • 2 tablespoons raspberry-flavored liqueur or water
  • 1/2 cup powdered sugar
  • 1 package (8-ounce size) cream cheese or light cream cheese
  • 1 cup whipping cream, whipped
  • 2 containers (6-ounce size) fresh raspberries, washed, drained (a few reserved for garnish)

Heat oven to 350F.
Combine all crust ingredients in medium bowl. Press onto bottom and up sides of ungreased 9-inch pie pan. Bake for 10 to 12 minutes or until lightly browned. Cool completely.Place frozen raspberries and syrup in 5-cup blender container or food processor bowl fitted with metal blade. Cover; blend at high speed until pureed (1 minute). Strain sauce to remove seeds.Place water in 1-quart saucepan; sprinkle with gelatin. Let stand 5 minutes to soften. Cook over low heat until gelatin is dissolved (1 to 2 minutes). Remove from heat; stir in raspberry puree, 1/4 cup
sugar and liqueur. Cover; refrigerate until mixture mounds when dropped from spoon (30 to 40 minutes).

Beat powdered sugar and cream cheese in small bowl until smooth. Gently stir in 1 cup whipped cream. Spread cream cheese mixture into cooled crust. Arrange fresh raspberries over cream cheese mixture. Pour gelatin mixture over raspberries, spreading to cover. Cover; refrigerate until gelatin is set (2 to 3 hours).Just before serving, pipe remaining whipped cream onto pie. Garnish with reserved fresh raspberries...wow what a great taste of raspberry pie with cheese and fresh raspberry...nice ! Enjoy !
