Raspberry Soda-Cracker Pie
INGREDIENTS
- 4 Egg whites
- 1/4 t Cream of tartar
- 1 t Vanilla extract
- 1 c Granulated sugar
- 16 Saltine crackers; crushed
- 1/2 c Pecans; chopped
- 8 oz Whipping cream
- 1/3 c Granulated sugar
- 1 t Vanilla extract
- 2 c Raspberries; to 3 cups fresh or frozen
INSTRUCTIONS
Preheat oven to 325 degrees; grease and flour a 9-inch pie plate. In a large mixing bowl, beat the egg whites and cream of tartar until foamy. Beat in 1 teaspoon vanilla extract. Gradually beat in 1 cup sugar until stiff peaks form. Fold in the crackers and pecans. Transfer the egg mixture to the prepared pie pan, spreading over the bottom and sides. Bake for 35 to 40 minutes until golden; cool. For the filling, in a mixing bowl, beat the cream, 1/3 cup sugar and 1 teaspoon vanilla until soft peaks form. Fold in the berries. Spoon into the crust. Store in the refrigerator.
