Cook til thick. Remove from heat. In this process I like to crush up the berries kind of into a sauce. If you want it sweeter, do it. Just remember that you are going to fold in more berries. Carefully fold in remaining berries. Spoon into cooled baked pie shell. Cover pie and refrigerator; chill for 2 hours. Stir until dissolved. Break into chunks the 10 ounces of frozen raspberries. Stir into mixture.&lt;br /&gt;Chill until slightly thick. Set aside 1 cup gelatin mix for top layer of pie. Stir sour cream and combined sugar, flour and salt together, mixing well. Spoon over berries, spreading to edge of shell. Sprinkle top with 2 teaspoons of sugar. Bake at 450~ for 10 minutes. Reduce heat to 350~; bake 30 minutes more or until topping is lightly browned. Mix together the sugar and flour and sprinkle half the mixture in the pie crust. Place the washed and sorted raspberries on top, then sprinkle the remaining flour and sugar mixture on top of the raspberries. Pour the cream over all. Bake in the center of pre-heated 350 degree oven for 35-40 minutes. Let cool, then chill for a minimum of 2 hours. Best if served the same day. Stir every 30 seconds until creamy and soft. Watch closely. Coat pie shells to rim with chocolate with a spoon evenly. Place in refrigerator to harden chocolate (approximately 30 minutes). Creme de Cassis (black currant liqueur)&lt;/li&gt;&lt;li&gt;4 tbsp. cornstarch&lt;/li&gt;&lt;li&gt;1 tbsp. fresh lemon juice&lt;/li&gt;&lt;li&gt;Pinch of salt&lt;/li&gt;&lt;li&gt;1 recipe pie crust&lt;/li&gt;&lt;li&gt;2 tbsp. butter&lt;/li&gt;&lt;li&gt;3 paper-thin slices lemon&lt;/li&gt;&lt;/ul&gt;INSTRUCTIONS&lt;br /&gt;Preheat oven to 425 degrees.&lt;br /&gt;Toss raspberries and sugar together in a mixing bowl.&lt;br /&gt;Whisk Cassis and cornstarch together in a small bowl until smooth. Stir Cassis mixture, lemon juice and salt gently into berries.&lt;br /&gt;Roll out 2/3 of the pastry and line the pie pan; leave edges untrimmed. Bake until golden brown at 450 degrees, about 10-12 minutes. Mix raspberries, egg whites, lemon juice, sugar and almond extract and beat until very stiff. Fold in whipped cream. Spoon into pie shell and freeze at least 5 hours. Remove from freezer 15 minutes before serving. Drain the raspberries into a measuring cup and if necessary add water to measure ½ cup juice.&lt;br /&gt;&lt;br /&gt;In a small saucepan, combine cornstarch and sugar, slowly stirring in juice. Cook over low heat, stirring constantly, until thick and clear (it will happen). Remove from heat and add berries.&lt;br /&gt;&lt;br /&gt;Combine sugar, flour, cornstarch and salt in a saucepan. Mix with wooden spoon or a heat proof spatula. Blend in milk gradually, then add egg yolks. Add butter. Cook until thick and smooth, stirring constantly and scraping down the sides of the pan frequently. Remove from heat. Add vanilla. Stir until smooth and blended, scraping down sides of pan well. Poor hot filling into a pre-baked 9” pie shell.&lt;br /&gt;&lt;br /&gt;Beat egg whites at high speed until frothy; add the 3 tablespoons of sugar gradually while beating. Beat at highest speed until very stiff peaks form. Fold thickened fruit into the egg whites. Using a spatula, spread evenly over the hot cream filling (just as you would a lemon meringue pie) sealing to the crust on all sides.&lt;br /&gt;&lt;br /&gt;Bake at 350°F degrees for about 25 minutes or until the center appears to be set when wiggled and before the eggs and the fruit start to turn a light brown. Sprinkle gelatin over 1/4 cup cold water in saucepan.Let stand 2 minutes, then stir with rubber spatular over low heat until liquid simmers and gelatin dissolves. Stir gelatin into raspberry puree. Set bowl in larger bowl half filled with ice&lt;br /&gt;water. Stir gently to chill until it mounds slightly and has the consistency of beaten egg whites.&lt;br /&gt;Remove from ice bath. Beat cream with mixer until soft peaks form. Stir about 1/4 of the cream into raspberry mixture, then fold in remaining whipped cream. With a fork, blend in the butter until the mixture has a crumbly consistency. Using the back of a large spoon, press the crumb mixture firmly in side a 9" pie plate to form a crust. Bake crust in the oven for 8 minutes. Remove and let cool.To prepare the filling, melt the chocolate with milk over low heat in a small sauce pan, stirring constantly. Let cool.&lt;br /&gt;In a large bowl, beat the cream cheese and sugar together. Add the Grand Marnier and melted chocolate mixture and blend. Using a food processor fitted with a steel blade, puree the fresh berries or thawed frozen berries. Strain out the seeds. If you are using fresh berries, add the sugar and pulse to dissolve the sugar. Add the Grand Marnier and mix until the sauce is blended. Top the pie with whipped cream, shaved chocolate and fresh raspberries. Heat oven to 450.&lt;br /&gt;Prepare 1 crust according to package directions for unfilled one-crust pie using 9" pie pan. Bake 9-11 minutes or until lightly browned; cool. To make snowflake crust, unfold remaining crust onto ungreased cookie sheet; remove plastic sheets. Cut crust into 7-1/2" diameter circle; discard scraps. Refold circle into fourths on cookie sheet.&lt;br /&gt;&lt;br /&gt;With knife, cut designs from folded and curved edges; discard scraps. Unfold. Set aside. In a medium pan, stir together 2 cups of the raspberries, the 3/4 cup sugar, cold water, lemon juice, and cornstarch. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat. Cool slightly. Cover and refrigerate until chilled. Carefully fold 2 cups of the remaining raspberries into the chilled mixture. Spoon into pastry shell. Cover; chill for at lease 2 hours or until firm. To serve, in a chilled metal bowl, combine whipping cream and the 2 T. sugar. Beat with chilled beaters of an electric mixer on medium speed until soft peaks form.
